Chapli Kebab
A Peshawar street-food classic: coarsely spiced minced meat patties studded with tomato and coriander, shallow-fried until the edges turn deep and crisp.

Mix the patty base. In a large bowl, combine minced meat, tomato, onion, green chilies, coriander, crushed coriander and cumin seeds, pomegranate seeds, chili flakes, ginger-garlic paste, and salt.

Bind the mixture. Add the egg and cornflour, then mix everything together by hand until well combined and slightly sticky.

Shape the kebabs. Divide into 4–6 portions and flatten each into a thin, wide patty (about ½ cm thick) — chapli kebabs are traditionally flat and irregular, not perfectly round.

Heat the oil. Warm a generous layer of oil in a flat pan over medium heat until shimmering.

Fry until crisp. Place patties in the hot oil without crowding the pan. Fry 5–7 minutes per side, until deep golden-brown and cooked through.

Drain and serve. Lift onto paper towels to drain excess oil. Serve hot with naan, sliced onions, and yogurt or chutney.

- →No pomegranate seeds? A squeeze of lemon juice in the mix gives a similar tang.

- The kebabs fall apart in the pan.
- Drain excess liquid from the tomato and onion, mix until the meat feels tacky, and chill the shaped patties for 10–15 minutes before frying.
- The kebabs are dense or tough.
- Mix only until the mixture binds, shape with a light hand, and keep each patty thin rather than compacting it firmly.
- The outside burns before the center cooks.
- Lower the heat to medium and make the patties thinner. Let the oil return to temperature between batches without becoming smoky.
