Chicken Biryani

Fragrant basmati rice layered with spiced chicken and golden fried onions, then gently steamed (dum) so every grain soaks up flavor. A festive dish that's easier than it looks.

    Marinate the chicken. In a bowl, mix chicken with yogurt, ginger-garlic paste, biryani masala, turmeric, and salt. Cover and marinate for at least 30 minutes.

    Fry the onions. Heat oil in a large, heavy-bottomed pot. Fry sliced onions until deep golden brown and crisp. Remove half for garnish; leave the rest in the pot.

    Cook the chicken masala. In the same pot, add the marinated chicken, chopped tomatoes, and green chilies. Cook uncovered on medium heat until the chicken is tender and the oil separates from the masala, about 15–20 minutes.

    Par-boil the rice. In a separate large pot, bring water to a boil with the whole spices and salt. Add the soaked rice and cook until it's about 70% done (still firm at the core). Drain well.

    Layer the biryani. Spread the chicken masala evenly in the pot. Layer the par-boiled rice on top. Sprinkle with fried onions, mint, coriander, and the saffron milk.

    Cook on dum. Cover the pot tightly with a lid (seal the edge with dough or foil if needed). Cook on very low heat for 20–25 minutes so the rice finishes steaming in the trapped flavor and steam.

    Rest, then serve. Turn off the heat and let the biryani rest, covered, for 10 minutes. Gently fluff and mix from bottom to top before serving with raita or salad.

Tips & Variations

  • Don't skip the resting time — it lets the layers finish steaming evenly.
  • No biryani masala on hand? Use 1 tsp each of cumin, coriander powder, and garam masala instead.
  • For a milder version, remove seeds from the green chilies before adding.
  • Leftovers reheat well with a splash of water, covered, on low heat.
